Winemaking
Fermented using only wild yeasts, and slowly racked to avoid filtration. The wine is then aged for 12 months in 100% new French oak barrels.
Tasting Notes
A powerful young matheran on the nose with sweet black fruit, blackberry, prune, black plum and a sprinkling
of spicy licorice and pepper spices. In the mouth, she is powerful, with musculosic tannins, a spicy, sweet, salty finish of camphor wood, tobacco, raspberry and coffee. It also indicates excellent aging potential.

Roasted eggplant, grilled vegetables, spice rubbed chicken, hard aged cheeses, grilled/smoked seafood, curried pork chop, Pad Thai.

SILVER HEIGHTS VINEYARD, leading the way for biodynamic viticulture and minimal-intervention winemaking in China, is now ready to launch their newest collection of Natural Wines: Jiayuan 家园. Three single-varietal cuvées have been produced created in very limited quantity (less than 3000 bottles each), using an extremely purist approach to winemaking that focuses on wild- yeast fermentation, no filtration, and minimal sulfur.
