Collection: Shanxi 山西

The continental climate and higher altitude here allows for longer sunshine hours and high variation between day- and night-time temperatures, which can lead to high-quality, balanced wines, as the grapes can ripen well during the warm day and retain acidity during the cool nights. The notable wine-producing areas are Taiyuan and the Loess Plateau. Vines require manual burying in the winter to survive.
