Hand-picked and sorted. Bucher Vaslin press, cold soak, the 2 weeks fermentation in small stainless steel vats at 27˚C. 18 months ageing 100% new French oak (225L), bottle aged for 1 year before release.
Tasting Notes
2018 is the inaugural vintage for Célèbre's Cabernet Sauvignon, with intense notes of dark plums, blackcurrant and black cherries. The evolution of these aromas has progressed into a sublime complexity. On the palate, a charming first impression, fine and elegant, a crescendo of intensity follows to a plump but structured mid palate with dusty tannins. On the finish, the lingering notes of coffee and chocolate joins the silky fruits, with flavours seeing no end.

Most of China’s vineyards lie just north of the Yangtze river. Around 80 per cent of China’s wine growers overall are dedicated to bordeaux-style red wines, and cabernet sauvignon is the predominant grape (China has the largest planting area of cabernet sauvignon vines in the world). You’ll also find pinot noir, muscat hamburg, and grape crossbreeds – made when growers deliberately cross two grape species – such as marselan, a blend of cabernet sauvignon and grenache.
