Liaoning 辽宁

One of China's most northeastern provinces, the region has emerged as a prominent and promising location for ice wine production. Its unique continental monsoon climate, with hot, rainy summers followed by intensely cold winters, provides the essential conditions for this luxurious dessert wine. The core of its ice wine industry is concentrated along the Hun River Valley, particularly within the foothills of the Qianshan Mountains, where vineyards benefit from well-drained soils and significant temperature variations. It is here that vineyards, often planted with the Vidal grape variety, endure temperatures plummeting well below -8°C, allowing the grapes to freeze naturally on the vine. This deep freeze concentrates the sugars, acids, and flavours, which are then carefully harvested and pressed while still frozen to create Liaoning's complex, honeyed, and intensely sweet ice wines, establishing the province as China's foremost and most respected ice wine appellation.
