Winemaking 
• Grapes are 100% hand picked and selected.
• Cold maceration, temperature controlled fermentation. • Aged in 50% French new oak barrels and 50% 1 year old oak barrels for 18 months.
• Lees racking. Filtered by traditional Bordeaux methods topreserve complexity.

Tasting Notes 
The level of concentration has never failed to impress for this wine. Dark cherry accompanied with fennel, violet and coffee beans. Savory notes added to its complexity with firm tannins to support its richness. This wine can benefit more with 3 to 5 years of aging.

Food Pairing 
Can be enjoyed alone or paired with grilled beef steaks,roasted goose, double cooked pork slices; roasted pigeon; roasted duck; stilton cheese; etc.

SILVER HEIGHTS VINEYARD, leading the way for biodynamic viticulture and minimal-intervention winemaking in China, is now ready to launch their newest collection of Natural Wines: Jiayuan 家园. Three single-varietal cuvées have been produced created in very limited quantity (less than 3000 bottles each), using an extremely purist approach to winemaking that focuses on wild- yeast fermentation, no filtration, and minimal sulfur.
