The grapes are harvested late, typically between November and December, resulting in a juice yield of 35% to 40%. This late harvest concentrates the grape's flavour compounds and acidity. The wine undergoes cold pressing, followed by fermentation in temperature-controlled stainless steel tanks, preserving its fresh and vibrant character.
Tasting notes This wine presents a deep amber hue, leading to aromas of dried pear, quince, baked apple, and a hint of nutmeg or clove. The palate is rich and concentrated, with flavors of dried fruits, complemented by a caramelized character. Despite its sweetness, the wine maintains a harmonious balance with its natural acidity, offering a long and persistent finish.
